Double Chocolate Zucchini Bread

Every once in a while I like to highlight another blogger’s recipe that I have recently tried and enjoyed. Today, that recipe is chocolate zucchini bread from Danielle at Live Well, Bake Often.

I have always liked zucchini breads and cakes but they are not something that I make very frequently. I’m not really sure why, they’re delicious! I think it could be because I just use up our zucchini so quickly that I never have any left for baking! You can find one of my all time favorite zucchini side dish recipes here.

I made this bread last weekend after coming across it on Pinterest and absolutely LOVED it! First of all, if you have never baked with zucchini, or you don’t like zucchini then you might think this is strange but the reason people love it so much is that it keeps whatever you are baking (cake, bread, muffins, etc.) super moist! You don’t taste the flavor of the vegetable at all. You don’t even notice the texture of it. Also, this is a great way to sneak some veggies into your kids snacks!

This bread has such a rich and delicious chocolate flavor but it’s not too sweet. It has a slight crunch to the crust with a light and moist center. The texture is almost fudge like!
