Banana Bread

There’s something about a fresh piece of banana bread, warm, straight out of the oven. It’s sweet and airy inside and it’s slightly crunchy outside always hits the spot for me. I love topping it with a little butter or honey and just watching it melt. I don’t have many baked goods on my comfort food list but this is most certainly one of them.

I have been using the same recipe for as long as I can remember. It has never failed me. I couldn’t tell you who or where it’s from but I have never had a reason to change it. If it ain’t broke, no need to try and fix it, right?

This is just the basic, but still very delicious recipe. You can change it up and make it a little bit different every time you bake it by adding other ingredients as mix-ins. Try chopped nuts (pecans or walnuts are my favorites for this bread), chocolate chips or even shredded coconut. Or you could try nuts, chocolate chips AND coconut. Get a little crazy with it!

Another good mix-in option would be fresh blueberries, however you will have to adjust the cooking time for that one. Any fresh fruit will add extra moisture to the batter and will require a little bit longer in the oven.

As you can see by the photos, this really is a family favorite recipe in our house …

Banana Bread

Ingredients

  • 1 stick of butter (8 tbsp), room temperature
  • 1 cup sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 tbsp milk
  • 2 cups flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt

Instructions

  1. Preheat oven to 325°
  2. In a medium bowl, cream together butter and sugar. Add the eggs one at a time. Add in bananas and milk and mix until combined.
  3. In a separate bow sift together flour, cinnamon, baking powder, baking soda and salt.
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Pour batter into a greased loaf pan lined with parchment paper.
  6. Bake 60-70 minutes.
