Favorite things Friday: soft & chewy peanut butter cookies
Happy Friday, foodies! I realize it’s been a little while since I have done a Favorite Things Friday post so here I am with my current obsession: soft & chewy peanut butter cookies with M&Ms!
This recipe is from Michael over at Inspired by Charm and is quite possibly one of my favorite cookie recipes of all time. Y’all, I have made not one but TWO batches of these cookies in the last month. Good thing my husband and I have friends and coworkers who also enjoy cookies because it probably would not have been our proudest moment if we had polished them of ourselves. Don’t get me wrong, I probably could have done it, they’re that delicious, but that doesn’t mean I SHOULD.
These cookies are perfectly soft & chewy. The M&Ms add a chocolaty bite that pairs so perfectly with the peanut butter. The pastel colored M&Ms are the perfect touch for spring but could easily be swapped for the regular colored ones or even the red & green ones come holiday season.
The first time I made this recipe I made the full amount and it made about 36 cookies (the recipe says it will make 2 dozen) which was plenty! The second time around I cut the recipe in half and still had enough to take to work as well as keep some at home for ourselves. During this second batch I also chilled the dough before baking it which kept to cookies from spreading as large as they did the first time.
The original recipe is the perfect amount for a crowd, a bake sale or other large event but if you’re looking to just make some for your household you will still get plenty by cutting the recipe in half.
