White Chocolate Brownies

A heavenly, fudgy brownie made with sweet white chocolate.

I love when a delicious meal or dish becomes part of a memory. There’s just something nostalgic about your favorite meals and recipes. Maybe your grandmother made something a certain way and you always loved it, or maybe you eat a specific dish on a holiday or other special day of the year. For example, our main wedding cake flavor was coconut with a vanilla buttercream icing. Now, each year on our anniversary we plan to enjoy coconut cake in one way or another (last year I made coconut cupcakes instead of a whole cake).
 When I moved from Saskatchewan to Oklahoma almost 4 years ago I knew without a doubt I would miss people but little did I know I would also come to miss certain foods. Some of these things have been easy for me to duplicate, such as poutine. I bake up some fries, toss on some cheese, drizzle with gravy and VIOLA! Others are a little more difficult and require occasional care packages from my thoughtful family and friends. 
Back home there’s a restaurant which has what I would consider a famous dessert. The Moxie’s white chocolate brownie. The brownie has a perfectly fudgy, chewy center and is topped with vanilla ice cream, whipped cream and chocolate sauce. I absolutely LOVED this dessert. Every year on our birthday, my aunt and I would share one for dessert when we went to this restaurant for lunch (again, food = memories). 
 Thanks to the magic of Pinterest I was able to search around and find a couple different recipes to mix together to create what is, in my opinion, a perfect replica of this ever-so-delicious dessert. 
This brownie is extra heavenly if you serve while still warm with a scoop (or two!) of vanilla ice cream or whipped cream … or both!

White Chocolate Brownies

White Chocolate Brownies


  • 8 ounces chopped white chocolate
  • 1 tablespoon vanilla extract
  • 1/2 cup butter, softened
  • 1 1/4 cups flour
  • 2 eggs
  • 1 teaspoon salt
  • 1/3 cup white sugar
  • 3/4 cup semi-sweet OR milk chocolate chips
  • 1/4 cup white chocolate chips


  1. Preheat oven to 350. Grease and lightly flour a 9×9″ pan.
  2. Melt white chocolate and butter in the microwave, stirring every 30 seconds. Set aside to cool.
  3. In a large bowl, beat eggs until foamy. Gradually add the sugar and vanilla, mixing constantly.
  4. Drizzle in the melted white chocolate mixture.
  5. Whisk together flour and salt and fold into the white chocolate mixture.
  6. Fold in chocolate chips.
  7. Spread the batter into the prepared pan.
  8. Bake for 30 minutes or until a toothpick comes out clean. Do not over-bake
