S’mores Bars

For me, nothing says “summer” like an ooey, gooey s’more! Making these bars helps me escape to summer through the classic s’mores flavors, no fire needed!

This recipe is the result of a craving. It was one of those “grocery shopping while hungry” days and I walked past Golden Grahams cereal. I immediately started to crave s’more and although it wasn’t a terribly cold day, I knew I didn’t want to sit outside and roast marshmallows. Cue s’mores bars!

This deliciously nostalgic treat has a process pretty much identical to your every day Rice Krispie treats which means that pretty much anyone can make them.

All though this treat is very simple, it’s also extremely delicious! You get all of your traditional s’mores flavors: the sweet crunchy graham crackers, little bites of chocolate and of course those sweet, sticky marshmallows!

I think the best part of these s’mores bars is that your fingers don’t get nearly as sticky as they do when you’re sitting around a fire making the real thing. I have no problem with marshmallow goop all over my fingers once in a while but it’s nice to be able to just grab a square of these and be transported back to summer if even for a brief moment!

S’mores Bars

S’mores Bars

Ingredients

  • 1 box of graham cracker cereal (12 oz)
  • 6 cups mini marshmallows (divided)
  • 1 1/2 cups semi-sweet chocolate ships
  • 4 tbsp unsalted butter
  • 1/2 tsp vanilla

Instructions

  1. Spray a 9x13 pan with non-stick spray. Set aside.
  2. Pour cereal into a large bowl. Set aside.
  3. In a saucepan over medium-low heat, melt the butter. Add 5 cups of marshmallows. Stir until melted. Add vanilla and stir to combine.
  4. Pour melted marshmallows over cereal. Stir carefully to start to coat the cereal.
  5. Once slightly cooled, add chocolate chips and remaining 1 cup of marshmallows. Stir to combine.
  6. Transfer to 9x13 pan and press down.
  7. Cool completely before cutting into squares.
