I love LOVE. All kinds of love. And therefore, I am a fan of Valentine’s Day. Now let me clarify. That does not mean that I support the consumer driven idea of what Valentine’s day is (selling the same old chocolate but adding and extra $30 to the price tag because you tossed it into a heart box with a bow etc) nor does that mean that I think it’s a day only for couples or people in love.
I think it’s important to let your loved ones know you care about them every day of the year but I think Valentine’s Day is just a nice reminder to do that. Like I said, I don’t believe it’s a day just for couples! In fact, one of my favorite Valentine’s Day celebrations was one I shared with my best friend, Nicole, where we had a girls night featuring face masks, pizza and a Rom Com starring Zac Efron.
But because I am in fact married and have a wonderful husband that I like to spoil, I like to make February 14th a day to show him my love and appreciation. My favorite way to spend the holiday is spending our money on things to do together rather than spending money on objects. I also love the idea of putting effort into making your Valentine something instead of always buying it. That’s where today’s recipe comes in!
If you aren’t already familiar, Christina Lane is a cookbook author and a blogger over at Dessert for Two. I came across her blog about 2 years ago and absolutley LOVED her concept! Small batch recipes, sweet and savory, that made the perfect portion sizes for just two people. Scaling down recipes is not always an easy task, so thank you Christina!
I made this recipe as a treat for my husband and I and LOVED the idea that it only made 6 cookies! It was enough that we could each enjoy a couple but we weren’t left with a ton of leftovers that would either a) ruin our new years resolution or b) go hard before we could finish them.
The cookies are rich in that classic red velvet flavor. They have a nice, chewy center but the perfectly crackled tops have a little bit of a crunch. And best of all, they are SO Easy to make and you likely have all of the ingredients on hand already! No delays, go make this now and share them with your sweetie!
Note: Christina uses white chocolate Reese’s peanut butter hearts and I could not find them here in town so I used Hershey’s strawberry filled milk chocolate hearts and it was DELICIOUS! Work with whatchu got, friends!
